Bamya (Okra Stew)

Ingredients:

1. Mutton 350g (cleaned and chopped)

2. Okra 250g (cut into 2-inch pieces)

3. Tomato 150g (crushed)

4. Onion 60g (diced)

6. Garlic 12g (minced)

7. Coriander leaves 30g (chopped)

8. Tomato paste 1 tsp

9. Cinnamon powder ½ tsp

10. Allspice powder ½ tsp

11. Black pepper ½ tsp (freshly ground)

12. Salt

13. Olive oil 1tbsp

14. Vegetable oil 4 tbsp

Method:

In a saucepan, place the meat and add 700ml of water. Then, add some salt, allspice powder, cinnamon powder, black pepper and place the sauce pan on high heat. Let it come to boil. Skim all the impurities. Let it boil or cook until the meat becomes tender. Take out the meat in a bowl and reserve the stock for later use.

In another pan heat the vegetable oil on medium flame. Add okra and fry for a minute. Add some salt and continue frying for another 4-5 minutes. Take out okra in a bowl. In the same pan add onion and fry for 3-4 minutes. Add tomato paste and roast for 2 minutes. Add crushed tomato and cook for 3 minutes. Now, place the mutton pieces and cook for 2 minutes. Pour in the reserved stock and de-glaze the pan. Add ½ cup of water and stir. Add in the cooked okra let it come to boil. Reduce the flame to medium low cover and let it simmer for 5-6 minutes.

In a separate pan, heat olive oil in medium heat. Add garlic and stir for a minute. Add chopped coriander leaves and fry for a minute. Now add the garlic coriander to the okra and meat. Cover and let it cook for another 3-4 minutes.

Adjust the seasoning. Bamya is ready to serve.
