Banana and Mango Bread
Ingredients:
1. Over ripe banana 3 (chopped)
2. Mango ripe 1 medium (chopped)
3. All-purpose flour 250g
4. Condensed milk (sweetened) 350ml
5. Baking powder 1tsp
6. Baking soda 1tsp
7. Cinnamon powder ½ tsp
8. Nutmeg grated ¼ tsp
9. Salt ½ tsp
Method:
Grease 8-inch loaf tin with little vegetable oil. Take a mixing bowl. Add chopped banana and roughly mash with the back of fork until it is well mashed. Pour condensed milk over it and whisk until the mixture becomes homogeneous. Sift together flour, baking soda, baking powder, salt and cinnamon powder over the banana mixture. Add nutmeg and chopped mango. Fold in the batter until it is well mixed and there is no visible loose flour left in the bowl.
Pour in the batter in greased loaf tin. Level with spatula and lightly dab. Bake in a pre-heated oven at 175C/350F for 50 to 55 minutes. Check for done-ness little earlier by inserting the toothpick in the center. If it comes out clean then it is done. Let it cool a bit in the loaf tin. Take out and let it sit on cooling rack.
Let it cool completely.
