Balsamic chicken and pears

Ingredients:

1. Chicken breast 200g (cut into 5 equal pieces)

2. Chicken stock ½ cup

3. Balsamic vinegar ¼ cup

4. Pear 1 (evenly sliced)

5. Onion 1 small (finely chopped)

6. Garlic clove 1 (finely chopped)

7. Dijon mustard 1tsp

8. Tomato paste 1tsp

9. Dry rosemary and thyme ½ tsp each

10. Salt and black pepper

11. Olive oil 3 tbsp

Method:

Marinate the chicken pieces with salt and pepper both sides and keep aside for 10 minutes. Pre-heat the heavy bottomed pan on medium heat. Add oil and place the chicken pieces. Let the chicken cook undisturbed until the bottom side becomes light brown, around 4-5 minutes. Flip the chicken pieces and cook on the other side for 4-5 minutes or until it becomes light brown on the other side as well.

In a bowl, add chicken stock, balsamic vinegar, rosemary, thyme and Dijon mustard. Mix everything well and keep aside for later. Take out the chicken from the pan in a plate when it is done. Add garlic and sauté for few seconds. Add onion and sauté for 2 minutes. Add tomato paste and saute for 3 minutes. Now add the sliced pears and continue cooking for 3 more minutes. Now throw in the chicken pieces and cook for a minute. Add the prepared balsamic mixture over the chicken and pear. Stir and let it come to boil. Lower the heat to medium low and let it cook for 8-10 minutes or until the chicken pieces are well cooked.

You can keep the sauce thinner by taking off the heat little earlier.
