Tsetang Korzi
Ingredients:
1. Plain flour 200g
2. Large eggs 120g (2 nos.)
3. Baking soda ½ tsp
4. Jaggery/sugar 150g
5. Water 100ml
6. Salt to taste
Method:
Place flour in a large bowl. Add eggs and baking soda. Knead the dough until it becomes almost smooth. Add little water or milk if the dough becomes little dry. Wrap the dough with cling film and let it rest at room temperature for 30 minutes. Knead the dough for few seconds. Dust some flour on clean surface and place the dough. Slightly flatten the dough with the end of palm. Dust some more flour and roll out the dough into a rectangular shape with the thickness of around 3 mm. Divide into 3 inches and cut into thin strips (watch the video for reference). Dust some flour so that it does not stick with each other. Heat oil in a deep pan on medium flame. Carefully place the strips in the oil. (Fry them in batches). When it starts to float lower the flame to medium low and fry stirring continuously until it becomes golden in coloured. Take out in an absorbent paper. Take any deep square or rectangular dish and line with parchment paper and keep aside for later.
In a saucepan place jaggery and water and place on medium heat. Once it comes to boil add salt and stir well. Let it cook until it reaches 1 string stage. Take off the flame and add the fried strips. Quickly coat them with jaggery by mixing thoroughly. Immediately transfer to the prepared dish and lightly press it from above (by placing parchment paper over it), so that it holds its shape.
Let it cool completely. Cut into desired size. Your Tsetang Korzi is ready.
