Chicken Congee
Ingredients:
1. Jasmine rice/ small grain rice 200g
2. Chicken stock 2ltr
3. Chicken breast 200g
4. Ginger julienne 14g
5. Corn starch 1 ½ tsp
6. Cooking wine 1tbsp
7. Sunflower oil 2tsp
8. Spring onion chopped ¼ cup
9. Toasted sesame oil 1tsp
10. Salt to taste
Method:
Wash rice until water becomes clear. Keep aside for later. Place chicken stock on high heat in a heavy bottom saucepan or pot and let it come to boil. Cut chicken breast into thin slices. Place in a bowl. Add salt, corn starch, cooking wine and mix with spoon for few seconds. Mix by hand for a minute. Add oil and coat chicken well with the help of fork. Once the chicken stock comes to boil, reduce heat to medium and add washed rice and stir well. Add little salt. Wait for it to come to boil again. You can give quick stir at this moment. Reduce heat to simmer and put the lid partially open. Let it cook slowly for about 25-30 minutes. Do not stir in between as it will result into rice sticking to the bottom of the saucepan/pot. Remove lid and stir well. Now stir constantly with whisk for 3-4 minutes or until Congee becomes creamy. Add marinated chicken pieces to the Congee individually. Mix thoroughly for 2 minutes (until chicken changes its colour). Switch off the flame and put lid on for 2 minutes. Chicken Congee is ready to serve.
